Roasted Radish Bites

can (13.8 oz) Pillsbury™ refrigerated pizza crust
Clean radishes. Slice the tops and bottoms from each radish, then slice each in half.
Use a paring knife to cut patterns into the tops of the red, rounded portion of each radish. Try cutting a checkerboard by slicing several thin-cuts half-way through the radish, or make a simplified rose by slicing thin cuts all the way around the radish, starting at the center and moving out. Cut some of the radishes into simple slices as well, to give the final flatbread bites a variety of sizes and shapes.
Heat oven to 400°F. Place radishes on a parchment-lined baking sheet, with cut patterns facing up. Drizzle with olive oil, salt and pepper generously.
Cook radishes in preheated oven until tender and slightly golden brown around the edges, about 18-25 minutes. Remove and cool.
Open Pillsbury™ dough. Unroll and slice into 12 small squares. Pull the squares gently to give them a free-form flatbread look. Place on a parchment-lined baking sheet and bake for 10-13 minutes, or just until light golden brown.
Mix goat cheese together with lemon rind. Immediately slather goat cheese on warm flatbread squares.
Top goat cheese with roasted radishes. Garnish with fresh dill. Serve and enjoy!
